Slow Cooker Lamb Curry

Ingredients
  • ½ cup oil

  • 2 lbs. cubed lamb

  • 2 cups finely chopped onion

  • ¾ tsp. salt

  • 2 Tbsp. minced garlic

  • 1 Tbsp. minced ginger

  • 2 serrano peppers (seeded & chopped)

  • 2 ½ Tbsps. curry powder

  • 1 ½ cup chopped tomato

  • 1 tsp. cayenne

  • 2 tsp. paprika

  • 2 tsp. Garam Masala

  • 1 cup water

  • 2 Bay leaves


Method
  1. In a medium saucepan, brown meat in oil then add to slow cooker.

  2. Add onion and cayenne to the same pan used for the meat. Sauté for 5 mins.

  3. Add garlic, ginger, and serrano peppers and sauté for 2 minutes.

  4. Add curry sauté for 1 min.

  5. Add tomatoes and water: bring to bubbling.

  6. Add paprika, garam masala, and bay leaves.

  7. Transfer all to a slow cooker.

  8. Stir, cover, and cook on high for 50 minutes.

  9. Stir and reduce to low for 6-8 hours.
